- 40 ml pomegranate juice

Starter: small pumpkin soufflés
For 6 people
Preparation: 35 minutes
- 250 g of pumpkin
- 250 g floury potatoes
- 3 egg yolks
- 5 egg whites
- 40 g butter
- Salt and pepper from the mill
Preparation
Prepare the mashed potatoes. Cook the potatoes in a pot of boiling water, then mash them with a fork so that the texture is not sticky.
Prepare the pumpkin puree. Brown the cubed pumpkin in a little butter. Then cover with water and cook. Mash with a fork or blend.
Mix the two purees, then add the egg yolks. And add the egg whites whipped until stiff. Add salt and pepper.
Fill the ramekins. Butter and lightly flour the sides then fill the ramekins with the preparation.
Cook about ten minutes in a bain-marie in an oven preheated to 220 ° C.

Main course: turkey with currants
For 4 people
Preparation: 50 minutes
- 4 turkey thighs
- 2 tablespoons of red currants

Preparation

For 6 people
Preparation: 20 minutes
For the biscuit
- 4 eggs
- 120 g powdered sugar
- 20 g flour
- 50 g of potato starch
- 80 g cocoa powder
For garnish
- 25 cl of pasteurized liquid cream
- 30 g icing sugar
- 150 g of red currants or other red fruits
Mix the egg yolks with sugar. Add the egg whites beaten until stiff. Then stir in the potato starch, flour and cocoa.
Pour the preparation in a baking dish, covered with a sheet of baking paper.
Cook at 220 ° C for a few minutes (the top must be golden). As soon as it comes out of the oven, cover the biscuit with a damp cloth and gently roll it to form a log.
Prepare the garnish. Whip the whipped cream, add the icing sugar and whisk again.
