Potato pancakes, potato pancakes – whatever they call them. But, whatever you call this dish, properly prepared potato pancakes will have an aroma that instantly whet your appetite and a pleasant taste of a “real” hearty dish.
And even if it is not dietary, but so delicious! However, there are as many ways to spoil even a good potato pancake recipe, as well as the names of this dish.
To make your potato pancakes great, use a few tips.
1. For cooking potato pancakes, it is best to use starchy potatoes. How can you tell them apart if you are not an expert? Look for light brown skinned potatoes. But from young potatoes, pancakes are not as tasty as from old ones. It’s all about starch: there is less of it in the young.
2. Use a fine grater to grate the potatoes.
3. Your task when cooking potato pancakes is not to let the grated potatoes darken, otherwise the pancakes will be less airy. To do this, you can grate the potatoes alternately with onions. In this case, your potato pancakes will be wonderfully golden and incredibly fragrant.
4. Don’t want to cry over the bow? Then replace it with sour cream or other fermented milk product. 1-2 tablespoons will keep the potatoes from browning.
5. An egg in the pancake dough is optional. It is worth adding it if you are not sure that there is not enough starch in the potatoes. The egg will keep the dough from falling apart.
6. Flour in potato pancakes is not needed. And even dangerous, as it destroys the taste of potato pancakes with a “rubber” shade.
7. If the pancake dough comes out thin, you can squeeze it out a little. Better yet, add a little starch (purchased or the one that will sink to the bottom of the bowl of potato juice).
8. In the preparation of appetizing, ruddy potato pancakes, the main thing is not to hesitate! Grated potatoes must be squeezed out, mixed with the rest of the ingredients and quickly fried, because potatoes oxidize from interaction with air and inevitably darken.
