The fruits of cherry plum, or wild plum, have several features that must be taken into account when making wine. This will avoid many mistakes. Here are the main points to be aware of:

  1. Choose fruits meticulously. Cherry plum, even with a little rot, is unequivocally rejected.
  2. It is not necessary to wash the fruits, the so-called wild yeast lives on the peel, without which there will be no fermentation.
  3. The anaerobic digestion process can be enhanced by using raisins.
  4. It is not necessary to remove the bones, but it is desirable. They contain hydrocyanic acid. The concentration is negligible, but it is better to get rid of it altogether.
  5. The pulp of the fruit contains a large amount of jelly-forming substance – pectin. To improve the waste of juice, you need to use a special preparation, which is called pectinase. It can be purchased in specialized stores. In his absence, you will have to be content with what you managed to put pressure on.
  6. A large amount of pectins greatly lengthens the clarification time of the wine.

Despite all the difficulties and long periods, the excellent taste and aroma of the resulting drink are worth all the effort.
