Meanwhile, cut 500 g of spinach and simmer it in oil for 15 minutes, until all the liquid has evaporated. Combine spinach with 180 g of ricotta cheese, 120 g of grated parmesan, salt and pepper to taste. Now divide the dough into two parts and roll out thin layers. One of them is placed in a special form for ravioli, sprinkled with flour. Fill the ravioli with spinach and cheese and cover with a second layer. If there is no form, you can take an ordinary glass and sculpt by hand. After that, it remains to throw the ravioli into salted boiling water and cook for 5 minutes.

Spanish paella is popular with many gourmets, because from crumbly rice you can create successful combinations with a variety of ingredients, including vegetables. So, pour 2-3 tablespoons of olive oil into a saucepan and fry the chopped onion in it until transparent. Add 2 chopped bell peppers of different colors, a head of fennel and simmer until the pepper softens. Then we pour a glass of washed rice into a saucepan, mix and pour a glass of boiling water. Add the bay leaf, 1 tsp rice vinegar, cover with a lid and simmer on low heat until the rice is ready. As soon as it swells, add 3-4 chopped tomatoes. If desired, you can put 100 g of soybeans, corn, peas. Remove the saucepan from the stove and let the paella brew for 10-15 minutes under the lid. Before serving, decorate the dish with fresh herbs and lemon slices.

Without French cuisine, the list of recipes for delicious vegetable European dishes would be incomplete. The most delicate cream soups are eaten with pleasure all over the world. And in France itself, carrot soup is popular. To start, cook a vegetable broth from one carrot, 2 onions and parsley stalks. While it is cooking, fry in olive oil a head of onions with 2 cloves of garlic. Add the diced fresh carrots to them and fry for another couple of minutes. Then filter the broth, pour it into the vegetables and cook until the carrots are ready. The finished soup with a blender is turned into a homogeneous puree and passed through a sieve. Finally, add 200 ml of warm cream, 1 tsp ground ginger, salt and pepper to taste. We heat the soup a little more, mix it and serve it to the table. It is best combined with sour cream, fresh herbs and crispy croutons.

In Greece, they also like vegetable dishes, especially moussaka, or casserole. First of all, we cut 5 eggplants into plates and soak them in salt water for half an hour. Then bake them for 15 minutes on a baking sheet in the oven at 180°C. At this time, fry in olive oil 2 heads of onions and one grated carrot. Pour out here 1/2 cup of rice and pour hot water, so that it completely covers it. In another pan, fry 4 potatoes cut into slices until golden brown. We lubricate the baking dish with oil and lay the vegetables in layers, not forgetting to add salt to each of them. The first part is eggplant, then 4 sliced tomatoes, then potatoes, carrot-onion roast and the final layer of eggplant. Fill the vegetables with a mixture of 300 ml of cream, 2 eggs and a pinch of salt and pepper, and sprinkle 150 g of grated cheese on top. We send the moussaka to a preheated 180°C oven for 30 minutes.

Vegetables also occupy a special place in Bulgarian cuisine. They are added to appetizers and soups, combined with fish and meat, baked in pots and stuffed. And vegetables are also used to make delicious pastries, such as pumpkin pie. Traditionally, it is made from an extract dough, but for our recipe, ready-made puff pastry is suitable. Coarsely chop 800 g of pumpkin and boil it in salted water, not allowing it to boil. When the pumpkin has cooled, grate it on a coarse grater. Add to it 150 g of sugar, 150 g of fried chopped walnuts, 100 g of softened butter, 1 tsp of cinnamon and mix well. The layer of puff pastry is rolled out into a wide rectangle, spread the filling from the edge, securely fasten it and roll up a tight roll. We cover it with oil, put it on a baking sheet and put it in the oven at 180°C for 30-35 minutes.
