Each knife has its own function. Most often, housewives get by with a knife that is universal in size and shape, but special knives make cutting much easier. What knives are suitable for what?
Chef’s knife
This is the most important of all knives in the kitchen. Its length is from 20 centimeters, but not too large as much as possible, since a long knife loses its flexibility and ease of use. A chef’s knife can do 90 percent of all work in the kitchen – chopping meat, butchering fish, peeling fruits and vegetables. However, from such manipulations, this knife quickly becomes unusable. It has a wide blade that wears out quickly.
Vegetable peeling knife
This knife has a narrower blade – up to 8 cm, and it is much more convenient and faster to cut vegetables and fruits with them, peel them off. The difference is especially noticeable when slicing onions and small berries. But too tough vegetables – carrots, parsnips, turnips – are inconvenient for them to cut. And as the cooks say, if you have to make an effort, it means that the process is going wrong: the knife can come off and cause injury.
Serrated knife
These knives are mainly used for slicing bread. The knife blade is, on average, 15 cm long. It is suitable for slicing products with a waxy surface – tomatoes, citrus pineapples and so on. The teeth adhere perfectly to the product and do not slip. The knife does not sharpen, but with proper use it will last for many years.
Boning knife
Or a bone extraction knife, ideal for cutting and deboning meat, poultry and fish of all sizes. Boning knives come in a variety of sizes from 7 to 40 centimeters. It is convenient to cut small products with small ones, and sinewy meat with large ones, separate it from the bone and chop cartilage.
Honing knife
In common people, this is a file for sharpening knives. This abrasive tool is essential in every kitchen. Each knife should be honed daily, as it does not sharpen, but slightly sharpens the blades. Only smooth blades of any thickness are allowed.
