5′-Sodium ribonucleotides 2-substituted (E635)

To preserve the original taste of products, as well as to enhance them, manufacturers often use various methods, including food additives. Additive E635 is a ribonucleotide that has the ability to act on tongue receptors. It is thanks to this additive that the dishes acquire an attractive aroma and a special taste. E635 helps to restore the lost organoleptic qualities of products: cheese, sausages, various sauces. In addition, with the help of additives, you can hide the low taste quality of raw materials of the second grade.

The properties of E635 do not differ much from similar glutamates. If you delve into the chemical composition of the food additive, you can see that this substance combines E627 and E631 (sodium guanylate and sodium inosinate). Their combination significantly enhances the quality of each. It is important to note that 2 percent of the E635 additive and 98 percent of E621 are able to enhance the properties of monosodium glutamate (E621) by about 4 times.

The product is in the form of a white crystalline powder. It may also be colorless. The additive has practically no smell, and its taste is very pronounced. The solubility of a substance depends on the substance. For example, the product is highly soluble in water, but absolutely insoluble in ether.

The components that are included in the supplement are made, most often from materials of animal origin. Therefore, said flavor enhancer is also a raw material of animal origin. From this it follows that vegetarians are not recommended to consume products with this nutritional supplement. For the same reason, Muslims, Hindus and Jews can refuse it. But only the manufacturer can indicate the origin of the ingredients as accurately as possible.

This dietary supplement is harmless if consumed in moderation. All this is explained by the fact that the production technology provides for a minimum concentration.

There is an opinion that sodium 5-ribonucleotides can adversely affect human health. This applies to people who have some chronic diseases that are associated with the joints: gout, rheumatism. The main reason is purine metabolism, as some of the supplement can be oxidized in the body to lactic acid.

There are suggestions that the E635 flavor enhancer may be harmful to people with chronic bronchial asthma. In some sources, you can see information that the supplement can cause pathology of the gastrointestinal tract. It should be noted that there was no scientific evidence of any beneficial effects of the additive on the human body.

Application of the substance

Additive E635 is used to enhance the taste and aromatic quality. Most often, it is used by manufacturers of snack products (chips, crackers, etc.).

In addition, sodium 5-ribonucleotides are used in the bakery industry, to be more precise, in confectionery. The substance is added to sauces, especially soy sauces, as well as cheeses.

By law, the specified substance is a safe additive, and is allowed in many countries. It is used in Belarus, Russia and many European countries. It should be noted that in Ukraine it is not a permitted additive.
