What to cook from sour milk

Sour milk, or yogurt, is a product of natural souring of natural milk.

 

Sour milk is a very popular fermented milk drink that is in great demand in Armenia, Russia, Georgia, our country and Southern Europe. Nowadays, during the preparation of yogurt, lactic bacteria, for example, lactic acid streptococcus, are added to milk, and for Georgian and Armenian varieties, matsuna sticks and streptococci are used.

Note that “long-playing” milk practically does not turn sour, and if yogurt is produced from it, then it will taste bitter. Therefore, if the milk is sour, this is an indicator of its natural origin.

 

Sour milk perfectly quenches thirst, is a useful afternoon snack or an alternative to kefir at night.

Sour milk pancakes

Ingredients:

  • Sour milk – 1/2 l.
  • Egg – 2 pcs.
  • Wheat flour – 1 glass
  • Sugar – 3-4 tsp
  • Salt – 1/3 tsp.
  • Soda – 1/2 tsp.
  • Sunflower oil – 2 tbsp. l. + for frying.

Sift flour and baking soda into a deep bowl, add salt, sugar, eggs and sour milk. Beat with a mixer at low speed, then increase the number of revolutions. Pour in 2 tbsp. l. butter, mix and set aside for 10 minutes, so that the soda “starts playing”. Fry pancakes in hot oil for 2-3 minutes on both sides.

 

Sour milk cookies

Ingredients:

  • Sour milk – 1 glass
  • Egg – 2 pcs.
  • Wheat flour – 3,5 + 1 glass
  • Margarine – 250 g.
  • Baking powder for dough – 5 gr.
  • Sugar – 1,5 cups
  • Butter – 4 tbsp. l.
  • Vanilla sugar – 7 gr.

Mix the sifted flour and baking powder with cold margarine (as you are used to – grate margarine or chop with a knife), mix quickly until crumbs form, pour in sour milk and a slightly beaten egg. Knead the dough so that the margarine does not melt, wrap in plastic wrap and refrigerate for an hour. For the filling, melt the butter, cool and mix with sugar, vanilla and flour, gently grind until fine crumbs. Roll out the dough, spread half of the filling over the entire surface and fold the dough into an “envelope”. Roll out again, sprinkle with the second part of the filling and fold back into the “envelope”. Roll the envelope into a layer a little less than a centimeter thick, grease with a beaten egg, pierce with a fork and cut arbitrarily – in triangles, squares, circles or crescents. Bake on a greased baking sheet in an oven preheated to 200 degrees for 15-20 minutes.

 

Sour milk cakes

Ingredients:

  • Sour milk – 1 glass
  • Wheat flour – 1,5 cups
  • Butter – 70 gr.
  • Soda – 1/2 tsp.
  • Baking powder for dough – 1 tsp.
  • Salt – 1/2 tsp.

Mix flour, baking soda and baking powder, add butter and chop into crumbs with a knife. Gradually pouring in the sour milk, knead the dough, put on a floured table and knead well. Roll out in a layer 1,5 cm thick, cut out round cakes, blind the trimmings and roll them out again. Place the cakes on baking paper and cook in an oven preheated to 180 degrees for 15 minutes until golden brown. Serve immediately with honey or jam.

 

Sour milk donuts

Ingredients:

  • Sour milk – 2 cups
  • Egg – 3 pcs.
  • Wheat flour – 4 cups
  • Fresh yeast – 10 gr.
  • Water – 1 glass
  • Sunflower oil for deep fat
  • Salt – 1/2 tsp.
  • Powdered sugar – 3 tbsp. l.

Mix yeast with warm water. Sift flour into a deep bowl, pour in sour milk and water with yeast, add eggs and salt. Knead the dough, cover with a towel and set aside for an hour. Knead the risen dough, roll out thinly, cut the donuts using a glass and a glass of a smaller diameter. Fry several pieces in a large amount of heated oil, remove and place on paper towels. Sprinkle with powdered sugar, optionally mixed with cinnamon and serve.

 

Sour milk pie

Ingredients:

  • Sour milk – 1 glass
  • Egg – 2 pcs.
  • Wheat flour – 2 cups
  • Sugar – 1 glass + 2 tbsp. l.
  • Margarine – 50 g.
  • Baking powder for dough – 1 tsp.
  • Vanilla sugar – 1/2 tsp
  • Raisins – 150 gr.
  • Orange – 1 pcs.
  • Lemon – 1 pcs.

Beat eggs with sugar, add sour milk, vanilla sugar, margarine and flour sifted with baking powder. Stir, add raisins and pour into a greased margarine mold. Bake in an oven preheated to 180 degrees for 35-45 minutes, check readiness with a toothpick. Squeeze the juice from the fruit, mix with two tablespoons of sugar and bring to a boil. Reduce heat and cook over low heat for 10 minutes. Allow the finished cake to cool slightly, soak in syrup and sprinkle with powdered sugar.

 

Sour milk pies

Ingredients:

  • Sour milk – 2 cups
  • Egg – 2 pcs.
  • Wheat flour – 3 cups
  • Margarine – 20 g.
  • Fresh yeast – 10 gr.
  • Salt – 1/2 tsp.
  • Minced pork – 500 gr.
  • Onions – 1 pc.
  • Sunflower oil for frying
  • Ground black pepper – to taste

Sift flour, add salt, eggs and yeast mixed with sour milk, mix and pour in melted margarine. Knead well and put in the refrigerator for an hour. Add chopped onion, salt, pepper and a few tablespoons of cold water to the minced meat. Roll out the dough, shape the patties, seal the edges tightly and press each patty a little. Fry in hot oil for 3-4 minutes on each side, if desired, close the pan with a lid.
