Compote is a refreshing soft drink traditionally served on the table in the summer; it has taken root in our country for dozens of generations. There are traditional recipes (for example, uzvar), but most of the compotes are made from all the berries and fruits available right now: just go and pick it off the branch. Sometimes the amount of ingredients goes off scale – and you get a multi-tasty compote. And sometimes the compote is cooked from only 1 ingredient, and then, in order to enhance and emphasize its taste, spices are used. It is important not to overdo it with spices, so as not to interrupt the taste of the fruits themselves – especially if you add several at once. They go well with any compote: zest and juice of lemon, orange and any citrus fruits. Carnation, mint, lemon balm will give a herbal note. Cinnamon will give the smell, and anise will give a pleasant bitterness. If the compote is made from sour fruits, use vanilla sugar. It is very important to drain all the spices after cooking so that they do not give color.
