Celery, like parsley and dill, belongs to the umbrella family. It can grow to a height of up to 16 inches. White celery is grown in a place protected from direct sunlight, so it contains less chlorophyll than its green counterpart.

Celery leaves are rich in vitamin A, while the stems are an excellent source of vitamins B1, B2, B6, and C, as well as potassium, folic acid, calcium, magnesium, iron, phosphorus, sodium, and plenty of essential amino acids.

Choose green celery, it has more chlorophyll. Make sure it’s fresh and not lethargic. When storing celery in the refrigerator, keep it in an airtight container or wrap it in a plastic bag.

Celery produces its own “pesticide” to protect against fungi. The protective layer is formed by psoralens, which protect celery, but are poorly perceived by some people.
