Tavern – the manufacturing process today
Moonshine (tavern) is an alcoholic drink that is obtained from mash (alcoholic mass). To do this, it is distilled through homemade apparatus. Braga is the result of fermentation of foods that contain starch. These are cereals, fruits, potatoes, sugar or beets. The strength of the finished drink reaches 70-85 °, which is twice as much as that of traditional vodka.

Most countries prohibit residents from manufacturing and selling this product. The fact is that the legal trade in alcoholic beverages is subject to large taxes, and this gives a significant profit to the state. It is impossible to do the same with illegal vodka.

The distillate is made in several stages:

• Making home brew.

• Distillation through a moonshine still.

• Rectification.

• Purification of the resulting product.

It is worth noting that the last two steps are optional, whether they are carried out or not, depends on the person who makes it.

An interesting fact is that many legal alcoholic beverages are made in this way: rum, whiskey, chacha, gin, brandy, fenya. Modern vodka is made from alcohol, which was obtained by the method of rectification, so it cannot be considered moonshine. In contrast, an alcoholic drink that was made before the beginning of the twentieth century, and was her in the traditional sense of the word. At that time, it was called pennik, semi-bar, bread, table, plain or hot wine.

It is necessary to remember the fact that it is very difficult to get a quality product at home due to a number of such reasons:

1. Braga contains heavy organic substances, which are converted into light organic compounds during heating. Many of them are dangerous to humans, such as methyl alcohol. In order to remove these substances from the wash, it is necessary to completely complete the distillation process. It cannot be replaced by freezing or chemical precipitation. The first 8% of the distillation volume cannot be consumed by humans, because it contains a large dose of methanol.

2. Active evaporation of alcohol from the mash occurs at lower temperatures than its boiling. Therefore, together with alcohol, fusel and essential oils will evaporate. For complete purification, you need to do a second distillation or rectification.

3. A quality product in home production can be obtained by using the multi-stage distillation method. This will fix the problems described above.

Distillate making process

To make vodka yourself, you need a vacuum boiling device. Its design consists of a wash tank, a funnel, connected plates, a refrigerator-cone, a tube, a heat-resistant hose and a water collector.

To make mash, you need yeast (100 g), water (3 l) and sugar (1 kg). All these products must be mixed, tightly closed and infused for 7 days. During distillation, ethyl alcohol vapors are released from this mash. It is these chilled vapors that are the famous alcoholic beverage.

The distillation process is quite simple: vapors containing alcohol are released from the heated mash, they are cooled and condensed with water, undergo natural purification and flow out as a finished product.

Under no circumstances should the braga be overheated, otherwise the dishes may simply explode.

From the waste of the used mash, you can make a new sourdough. Experts say that the quality of the new vodka will then be much better.

By the way, there are many ways to check the quality of the finished drink. But all distillers agree that the more transparent the vodka, the stronger it is. The best vodka is obtained from mash, which was insisted on sprouted wheat.
