Products required for the test
In order to bake delicious yeast pies, take: – 0,5 liters of milk; – 20 g dry yeast; – 3 eggs; – 70 g of butter; – salt on the tip of a knife; – 1 tbsp. l. Sahara; – 70 g of vegetable oil; – 1 kg of flour.
If you plan to bake pies with unsweetened filling, then you do not need to add sugar to the dough. But even for sweet pies, it is important not to overdo it with sugar, otherwise the dough will turn out not to be rich, but too dense in structure.
The recipe for yeast dough for pies
Before preparing the yeast dough, remove the yeast and other products from the refrigerator in advance so that they have time to reach room temperature. Sprinkle flour to give airiness through a sieve, saturating it with oxygen. Heat the milk to a warm, but not too hot temperature, and dissolve the yeast in it. Add salt, sugar, eggs, butter and half the flour there, and then knead the dough. When it becomes smooth, add vegetable oil to it, stir again, add flour and bring the dough until soft. The recipe itself is pretty quick, it takes a lot of time only to rise the dough, but this is the peculiarity of yeast baking. Cover the finished kneading with a towel, leave in a warm place for an hour and a half so that the dough has time to rise. When it increases in volume, beat the dough thoroughly again and set it aside again for an hour and a half. After the second rise, you can start forming the pies. To prevent the dough from sticking to your hands and countertop, use vegetable oil to lubricate them.
Pay attention to the shelf life of the yeast used, since if it is on its way or has already expired, the dough will not rise on them.
Divide the finished dough into pies into pieces a little larger than an egg, make a small depression in the center of each, put the filling, give the product an oval shape and place on a baking sheet pre-oiled or lined with baking paper. You can use a silicone mat for this, to which the dough is guaranteed not to burn during baking. If you want a shiny surface on pies, brush them with egg yolk before baking. As fillings, you can use various combinations of products, ranging from fried minced meat with onions or chopped boiled eggs with herbs to homemade thick jam or jam. The sweet filling must be thick enough so as not to leak out of the pies during their preparation. Preheat the oven to 180 degrees and place a baking sheet with pies inside for 20-25 minutes.
