“Finding an egg substitute is only part of the equation in the science of vegan baking,” says Danielle Konya, owner of a vegan bakery in Pennsylvania, USA. So, Konya often uses potato starch, which performs one of the functions of eggs, namely, to bind all the ingredients together.

Dairy products such as milk, yogurt, or kefir help keep baked goods fresh and palatable. Unfortunately, these products are not vegan. But do not immediately throw out the preparation of the cream from your recipe – it really makes pastries much tastier. Instead of regular milk, you can use almond milk, for example. And if a person is allergic to nuts, then soy can be used. “We love adding soy yogurt to baked goods, especially cookies, to make the center soft and the edges slightly crunchy,” Konya explains.

“Healthy” and “vegan” baking are not the same thing. Therefore, do not overdo it. In the end, you are not preparing a salad, but baking a cupcake, cake or cupcakes. So if a recipe calls for a glass of vegan sugar, don’t skimp on it, and feel free to put it in. The same goes for oils. Be sure to use vegan butter substitutes, although they can be a bit greasy. But without them, your pastries will turn out dry and tasteless. In addition, in traditional recipes for various sweets, oil also performs an important binding function. So if you don’t want your baked goods to be tasteless and out of shape, then don’t get too hung up on making them absolutely “healthy”. Otherwise, you will not be able to make a confectionery masterpiece.
