This vegetable was one of the first that man learned to grow several millennia ago. And at the beginning of the XXI century, its first harvest was obtained in zero gravity on board the International Space Station. It is used in almost all cuisines of the world, adding it to salads, soups, second courses and pastries. And right now his season is coming. It’s all about green peas. We offer to cook something delicious and useful from it for the whole family to enjoy.

Tenderness in every spoon

It is not known exactly where and when the first sprout of green peas planted by human hands broke through. According to scientists, this happened about 5 thousand years ago in the Balkans or the Middle East. According to other sources, peas were first grown in Ancient China. In any case, it has safely survived to this day to become a useful ingredient in many dishes. We offer to open the tasting with a delicate cream soup with peas.

Ingredients:

  • green peas-800 g
  • vegetable broth — 1 liter
  • leek — 2-3 stalks
  • shallots — 3-4 heads
  • celery — 1-2 stalks
  • sour cream not less than 25 % — 4 tbsp. l.
  • olive oil — 2 tbsp.
  • butter — 1 tbsp. l.
  • salt, white pepper, bay leaf — to taste
  • basil — a small bunch
  • dill for serving
  • garlic – ¼ clove

Melt the butter in a saucepan, pour in the olive oil and heat it well. Chop the leeks, shallots, garlic and celery, passer over low heat for 15 minutes. Pour in the broth, bring to a boil, pour out the peas, put the bay leaf and spices. We cook everything for no longer than 5 minutes, remove the laurel and carefully puree it with an immersion blender. Finely chop the basil, mix with crushed garlic and sour cream, season the soup. Bring it to a boil again, stirring constantly with a spatula, and immediately remove from the heat. Garnish each portion of the soup with pea seeds and dill sprigs.

The chicken pecks at the pea

It is noteworthy that until the XVI century, green peas were used exclusively in dry form. So it was more convenient to prepare it for the winter for the future. But in the XVI century, Italian breeders brought out new varieties of beans that could be consumed fresh. It turned out that they are just as delicious and complement different dishes well. Including light chicken soup with vegetables.

Ingredients:

  • chicken drumsticks — 2 pcs.
  • water — 1.5 liters
  • onion — 1 head
  • carrot — 1 pc.
  • green peas — 200 g
  • potatoes — 2 pcs.
  • parsley — 3-4 sprigs
  • salt, allspice, bay leaf — to taste

Fill the shins with water, put a whole head of onion, bay leaf and spices. Bring to a boil and cook over medium heat for 30-40 minutes, removing the foam as necessary. We take out the chicken and onion, cool the meat and cut it into small slices. We cut the potatoes and carrots into medium cubes, put them in boiling broth and bring them to readiness. At the end, pour out the green peas and let them boil for 5 minutes. We return the chicken meat to the pan, salt it to taste and let it brew under the lid. Serve the soup, garnished with parsley leaves.

Salad that slims

Green peas are a suitable product for those who take care of the figure. It is rich in vegetable protein and fiber, so it creates a feeling of satiety for a long time. In addition, it accelerates the metabolism and improves the functioning of the intestines. We offer to supplement the diet menu with a spring salad with green peas.

Ingredients:

  • green peas-150 g
  • canned corn — 150 g
  • eggs — 3 pcs.
  • cucumber — 1 pc.
  • leek — 1 stalk

Refill:

  • cucumber-0.5 pcs.
  • garlic — 1 clove
  • natural yogurt — 200 g
  • lemon juice — 1 tsp.
  • salt, white pepper-0.5 tsp each.

We cook hard-boiled eggs, peel them from the shell, cut them into small cubes. Remove the peel from the cucumber, also cut into cubes. Chop the leeks into rings. Mix all the ingredients in a salad bowl, pour out the peas and corn. Now grind half of the cucumber and garlic in a blender into a homogeneous mass. Add the yogurt, season with salt, lemon juice and spices. We fill our salad with the resulting sauce and mix it.

Polka dots as a dowry

According to one version, Catherine de ‘ Medici brought green peas to France together with her new husband Henry II. It was with her light hand that green peas, or petits pois, became an incredibly fashionable delicacy. On this occasion, we offer to prepare a potato terrine — a French casserole made of peas.

Ingredients:

  • potatoes — 4-5 pcs.
  • cream 10 % – 200 ml
  • egg — 2 pcs.
  • flour — 1 tbsp. l.
  • green peas — 100 g
  • carrots — 1 pc.
  • onion-1 head
  • vegetable oil — 2 tbsp. l. + for greasing the mold
  • hard cheese-150 g
  • sour cream — 3 tbsp. l.
  • salt, black pepper, herbs of provence — to taste
  • breadcrumbs — a handful

We boil the peeled potatoes, knead them with a pusher, add the warmed cream, egg, flour, salt and spices. Beat the resulting mass with a mixer until it has an airy consistency. We cut the carrots into large strips, and the onions into half rings. Lightly brown the vegetables in a frying pan with vegetable oil.

Lubricate the baking dish with oil, sprinkle with breadcrumbs. Mix the mashed potatoes with onions, carrots and green peas. We put the puree in a mold and lubricate it with sour cream. We put the mold in the oven for half an hour at 180 °C. At the end, sprinkle the casserole with grated cheese and let it melt. Potato terrine is especially good when it is hot and exudes a seductive aroma.

Bean pie

The Russian word ” pea ” and the Sanskrit “garshati” have common roots. The second means “to rub”, so “peas” can be translated as “grated”. In the old days in Russia, dried beans were really ground into flour and baked bread. Fresh peas are also put in baking, but only as a filling. Why not make a vegetable quiche?

Dough:

  • flour-150 g
  • butter — 100 g
  • egg — 1 pc.
  • cold water — 1 tbsp. l.
  • salt-a pinch

Filling:

  • green asparagus — 200 g
  • green peas — 200 g
  • green onions — 5-6 feathers
  • butter — 2 tbsp. l.
  • hard cheese — 200 g
  • sour cream-400 g
  • egg — 4 pcs.
  • salt, black pepper, nutmeg — to taste

Rub the flour with butter, add the egg, cold water and salt. Knead the dough, knead it and put it in the refrigerator for an hour. Asparagus is cleaned from hard fragments and cooked in salted water with the addition of 1 tbsp. l. vegetable oil. We cool the stems and chop them into fragments. Grate the cheese on a coarse grater.

We tamp the cooled dough into a round shape, align the sides. We spread asparagus, green peas and chopped onions here. Beat the sour cream with eggs, salt and spices, pour the filling. Put the mold in the oven at 180 °C for 30-35 minutes. Such pastries with peas will taste better when they are completely cooled.

Pasta in green tones

The Germans are able to make their favorite sausages even from peas. This delicacy is prepared from pea flour, a small amount of pork and lard. It is noteworthy that pea sausage was included in the ration of German soldiers until the middle of the XX century. But the Italians prefer to add peas to their favorite pasta.

For pasta:

  • spinach — 1 bunch
  • green basil — 1 bunch
  • flour-400 g
  • egg — 1 pc.
  • water — 2 tbsp. l.
  • olive oil — 3 tbsp. l.
  • salt — to taste

For refueling:

  • green peas-150 g
  • sheep’s cheese-70 g
  • olive oil — 1 tbsp.
  • salt, black pepper, nutmeg pepper — to taste

The greens for the paste are washed and dried. We put it in a deep bowl, add the egg and olive oil, salt and whisk everything with a blender until smooth. Gradually add the sifted flour to the mass and knead the dough until it becomes smooth and elastic. If you have a pasta machine, then just pass the dough through it, but you can also make noodles manually: we roll out a thin layer on a floured surface and cut it into long strips with a sharp knife. Sprinkle a little more flour on top and let the noodles dry for 10 minutes.

Cook the pasta until the state of aldente 4-5 minutes in salted water. Drain the water and add olive oil, spices to taste and fresh green peas. Mix thoroughly, put it on a dish and add pieces of sheep’s cheese.

Breakfast in the palm of your hand

Due to the high content of protein and active substances, peas have a beneficial effect on the digestive system. In particular, it helps to digest heavy food, regulates metabolism, stimulates intestinal peristalsis. Here is a simple delicious pea dish that can be prepared for breakfast for good digestion for the whole day.

Ingredients:

  • egg — 3 pcs.
  • green peas — 100 g
  • feta cheese-50 g
  • green onions-2-3 feathers
  • olive oil — 1 tbsp.
  • salt, black pepper — to taste
  • fresh mint — for serving

Beat the eggs with a whisk with salt, add chopped green onions and green peas. Finely crumble the feta and pour it out to the eggs. Season everything with salt and pepper, mix vigorously. Lubricate the muffin molds with olive oil, spread the egg mass and put it in the oven preheated to 200 °C for 15-20 minutes. Before serving, we will decorate the portioned omelet with fresh mint leaves.

Simple Asian happiness

Peas in many peoples are endowed with a symbolic meaning. So, in China, it promises well-being and procreation. In the old days, the bride was pelted with peas at the wedding. And according to the number of peas left in the hem, they counted the future offspring. The next dish could well be on the festive table.

Ingredients:

  • long-grain rice-200 g
  • green peas — 70 g
  • red sweet pepper-0.5 pcs.
  • carrot — 1 pc.
  • onion-1 pc.
  • garlic — 2 cloves
  • sesame oil — 2 tbsp. l.
  • parsley — for serving

We boil the rice until it is half cooked and throw it into a colander. We pass the carrots in sesame oil with straws and the onion with a cube until they become soft. We cut the pepper into slices, add it to the roast. Pour out the peas and crushed garlic, continue to fry for another 2-3 minutes. Now we spread the rice and cook for another 5-7 minutes. Let the dish brew under the lid and serve with fresh parsley.
