In an ice plate: like in Odessa, okroshka has not yet been served anywhere
 

An unusual plate of ice in an Odessa restaurant is specially created for a beautiful serving of cold soup. And they have been doing this for several years. After all, such a plate is spectacular, convenient and practical.

“We have been serving meat okroshka with homemade kefir in such an original way for 5 years. Both the plate and the dish evoke unreasonable delight among visitors, ”says Yulia Angelova, owner and chef of the family restaurant Cafe U Angelovykh.

Julia took the idea from an old cookbook that her mother gave her 20 years ago. At first I tried, experimented, until I worked out the best option, suitable for the concept of a homely cozy restaurant.

 

Ice dishes for okroshka are made from purified water, edible flowers, herbs and bright ingredients of the dish. The temperature of the ice bowl for the soup is minus 18 degrees, in any heat okroshka will be cold for a long time. A serving of 350 ml just fits into a deep plate. Although, the size and shape of the plate can be any, it all depends on the imagination of the cook. And most importantly, you can also decorate the dishes for different types of first courses.

A bowl of ice will calmly stand for 2 hours, so you can not rush to eat, but enjoy the view and taste of okroshka to the fullest. But even if the plate begins to melt, it will not affect the taste of the cold soup.

By the way, in such a plate you can serve any cold dish of any national cuisine – Spanish gazpacho, Polish cold, vegetable salads.
