Rich in protein, vitamins and minerals, beans can be used to prepare many delicious and healthy dishes. Like all legumes, beans need to be soaked before cooking due to their hard shells and high fiber content.

There are white beans, colored beans and mixed beans on sale. A mixture of colored and white beans is not very convenient for cooking because different types of beans require different cooking times. Soak the beans in cold water for 6-8 hours before cooking. The water temperature should not exceed 15 degrees, otherwise the beans may sour. Not only will this make it difficult to digest, but it can also cause food poisoning.

After soaking, pour the beans with clean cold water, add bundles of parsley, dill, celery root, finely chopped carrots, onions and cook over low heat until tender, depending on the variety. After the end of cooking, remove the herbs from the broth.

Some varieties of colored beans give the broth an unpleasant aftertaste and dark color, so after boiling, drain the water, pour boiling water over the beans and cook until tender.

You will need:

– beans – 500 g; – butter – 70 g; – onions – 2 heads; – boiled or smoked brisket – 150 g.

Beat the boiled beans with a blender or pass through a meat grinder. Cut the onion into thin half rings, fry until golden brown and mix with the grated beans. Add finely chopped brisket and butter to the puree and heat over low heat.

Loin or ham can be used instead of brisket

You will need:

– beans – 500 g; – semolina – 125 g; – milk – 250 g; – butter – 50 g; – egg – 1 pc.; – flour – 1 tablespoon; – onion – 1 head.

Prepare the beans puree as above. Gradually pour semolina into boiling milk in a thin stream, stirring constantly so that no lumps form, and cook a thick semolina porridge. Mix the warmed bean puree with hot semolina porridge, add a raw egg, sautéed onion and mix everything well. Form small patties from this mass, breaded in flour and fry in a preheated skillet on both sides.

– sugar – 2 tablespoons; – yeast – 10 g; – salt.

Make beans puree. When it cools down to the temperature of a human body, add raw eggs, salt, sugar, yeast diluted in warm milk, sifted flour and mix the whole mass well.

It is better to dilute the yeast in warm milk in advance, so that they have time to ferment and give foam, then the dough will turn out to be more fluffy and light

Place the dough in a warm place for 1,5-2 hours. When it rises, fry the pancakes in a hot skillet in vegetable oil.
