How to separate the yolk from the protein (video)
 

Fresh eggs are easiest to separate – in them, the white is tightly attached to the yolk, and therefore they are easily separated.

  • Break the egg over the bowl with a knife in the very center of the shell so that it divides into 2 halves. Some of the protein will immediately be in the bowl. Now pour the egg into your palm and let the whites drain between your fingers. This is the dirtiest way to separate yolk and white.
  • The second way is to hold the egg in the halves of the shell, pour it from one half to the other so that the protein flows into the bowl and the yolk remains in the shell.
  • And the last way is to use special devices for separating the yolk and protein, of which there are a lot on the market. Or make such tools yourself. For example, break the required number of eggs into a bowl and suck in the yolks with the neck of a plastic bottle, leaving the ready-made protein mass in the bowl.
