How to make Kate Middleton’s favorite dessert

Ingredients for 6 servings:

dates (pitted) – 170 g

butter – 60 g

sugar – 170 g

baking soda – 1 tsp

flour – 225 g

Scharffen Berger chocolate chips – 120 g

boiling water – 235 ml

baking powder – 1 tsp

vanilla paste – 1 tsp

For sauce 

cane sugar muscovado – 310 g

butter – 200 g

Scharffen Berger chocolate chips – 60 g

cream – 9 tbsp. spoons

Cooking

First, cut the dates, sprinkle them with baking soda and pour boiling water over them. You can do this in advance – the day before you plan to cook the pudding. 

Then prepare the sauce: melt all the ingredients in a saucepan, stir until smooth. Bring to a boil and cook for about 4 minutes. Pour three quarters of the sauce into the mold (or several molds) in which you will cook the pudding (it is steamed), and let cool. The rest of the sauce is needed to pour over the finished dish. 

Whisk in the butter and sugar until light fluffy, add egg and vanilla whisking. Then add flour with baking powder, dates and chocolate chips. Put the resulting dough on top of the cooled sauce and steam the pudding for an hour. 

When the pudding is done, place it on a warm plate, reheat the remaining sauce and pour over the finished dessert. Serve with whipped cream or ice cream.
