How to cook flakes

You will need – flakes, salted water

1. Clean the scaly mushrooms from forest debris, sort out – leave the young mushrooms intact, take only the caps from the mature ones.

2. In young mushrooms, cut off the earthy base of the legs, wash the mushrooms well in cold water.

3. Cut large scales into several parts.

4. Put the peeled scales in a saucepan, pour cold water so that the mushrooms are completely covered.

5. Place the saucepan over moderate heat, add salt, cover and let it boil.

6. Cook the mushrooms for 20 minutes, sometimes skimming off the foam.

– Scaly – Russian name mushroom. Another common name – a hint comes from the Japanese language and means “slippery mushrooms”. His mushrooms got it because their caps are covered with a slippery jelly-like substance.

– Cheshuychatka is growing large accumulations on and under the trunks. The cap reaches a diameter of 2 to 18 centimeters, a rusty yellowish color with reddish scales. In young mushrooms, the cap is rounded, in adults it is flat-round. The pulp of the mushroom is whitish-yellow. The height of the leg is 7-10 centimeters, 1-1,5 centimeters – diameter, color – yellowish with brown-rusty scales.

Taste scales resemble porcini mushrooms.

– Scale in Russia spread out in the temperate zone, that is, in most of the country. It can be found in deciduous and coniferous forests in areas of high humidity. Scale grows in large clusters on trunks, stumps, in hollows, roots.

– Scale need differ from inedible slippery scales. It has a characteristic radish taste and smell. Outwardly, it differs from edible scaly by a darker brown-yellow mucous cap and sticky to the touch. In dry weather, the hat can be dry, but shiny, with a predominant orange-red and brick-red tones. Inedible flakes often grow not on the trunks, but on the soil.
