Phali is a famous Georgian snack, which is prepared from walnuts, vegetables and a large amount of greens. Beet veggies will give them a pleasant vegetable sweetness and exquisite delicate notes. In addition, it is nutritious and very useful.

Ingredients:

  • beet veggies (cubes) – 50 g
  • walnuts-100 g
  • cilantro-bunch
  • purple onion — 1 head
  • garlic — 2 cloves
  • hops-suneli-0.5 tsp.
  • saffron-0.5 tsp.
  • salt, white wine vinegar-to taste

Fill the beet veggies with water, bring to a boil and cook over medium heat for 15-20 minutes. Then we throw them into a colander and sprinkle with vinegar — so the beets will retain an intense color. Walnuts are dried in a frying pan without oil, cleaned from excess husks and crushed into crumbs with a blender.

Chop the greens, finely chop the garlic and onion, combine with nuts. At the end, we spread beet veggies. We continue to beat everything with a blender until a thick homogeneous mass is obtained. Season it with salt and spices, let it stand in the refrigerator for 30-40 minutes. Now we mold small neat balls with wet hands and let them freeze — delicious beetroot phali are ready!

Burger with an orange mood

At a picnic, it is always nice to have a snack with hamburgers, especially unusual ones. Instead of the traditional meat cutlet, we will prepare a nutritious vegetable cutlet from carrot veggies. They will give it an appetizing orange hue, a subtle aroma and a pleasant sweet taste. A charge of vitamins is also provided.

Ingredients:

  • carrot veggies (bars) – 50 g
  • eggs — 2 pcs.
  • flour — 70 g
  • semolina — 0.5 tbsp. l.
  • butter — 2 tbsp. l.
  • vegetable oil for frying
  • baking powder – ¼ tsp.
  • salt, black pepper, turmeric — to taste
  • breadcrumbs
  • grain loaf
  • sour cream and leaf salad for serving

Bring the water to a boil in a small saucepan, add salt, pour out the carrot veggies. We cook them for 10 minutes under the lid, then we throw them into a colander — it is important that the excess liquid completely disappears. We return the veggies to the pan, put the butter and knead it with a mash in the puree.

When it cools down a little, we introduce eggs, semolina, flour with baking powder in turn and knead a homogeneous mass. Add salt and spices in the process. We form burger patties, roll them in ground breadcrumbs and fry them until golden brown on both sides. We cut a round grain loaf lengthwise, lubricate one half with sour cream, cover with a salad leaf, put a carrot cutlet and the second half of the loaf. Such unusual carrot burgers will be appreciated even by meat eaters.

Bruschetta for gourmets

Instead of traditional hiking sandwiches, you can prepare delicious bruschettas with beetroot sauce. Usually beets have to be boiled for a long time or baked in the oven, then cleaned and cut. You don’t need to do all this with beet veggies. They are already peeled and conveniently sliced. At the same time, their taste is just as rich and natural.

Ingredients:

  • whole grain bread — 2 slices
  • feta cheese-50 g
  • hard cheese — 1 pc.
  • salt, black pepper — to taste
  • mint, nuts — for serving

For the sauce:

  • beet veggies (bars) – 50 g
  • natural yogurt — 1 tbsp.
  • garlic — 1 clove
  • olive oil — 2 tsp.
  • lemon juice — 1 tsp.

Beet veggies are boiled in slightly salted water for 15 minutes, drain the water and sprinkle with olive oil. We transfer them to the bowl of a blender, add yogurt, garlic passed through the press, a pinch of salt and pepper. Carefully whisk all the ingredients to make a smooth sauce.

Sprinkle whole-grain toast with olive oil, brown on both sides in a grill pan. We cut the hard cheese into thin plates. Bread is thickly greased with beetroot sauce, sprinkle with chopped nuts on top and put cheese plates. Before serving, garnish the bruschetta with mint leaves and sprinkle with lemon juice.
