Why coffee is served with a glass of water?

In restaurants or coffee shops we tend to order a coffee but the waiter will bring you a glass of water too. Why? let’s make it clear.

The first reason is so we could fill taste of coffee brighter

This tradition is probably due to the feature of drinking coffee in the Eastern countries. They drink strong coffee, without milk or cream. The recipe for a perfect coffee is enclosed in the saying: “Real coffee should be black as night, hot as Hellfire and sweet as a kiss”.
