Method of preparation

The meat is cut into portions and fried. The resulting broth is filtered, the mushrooms are washed and cut into strips. Sauerkraut is finely chopped and stewed for 1,5-2 hours with the addition of mushroom broth, sauteed tomato puree. Carrots and onions are chopped, sauteed. Put meat, stewed cabbage, sauteed vegetables in a pot, pour water, add mushroom broth, bring to a boil, season with browned flour, diluted water or mushroom broth, put salt and spices, cover with a dough cake, bring to readiness in an oven for 15 – 20 min For a flat cake, yeast is diluted in warm water with a temperature of 30-35 ° C, sugar, salt, sifted flour are added, the dough is kneaded and put for 3-4 hours for fermentation in a room with a temperature of 35-40 ° C. When the dough increases in volume 1,5 times, knead for 1-2 minutes and again leave for fermentation, during which the dough is kneaded another 1-2 times. The finished dough is divided into 18 g pieces and rolled out into round cakes. Let go of the boyar cabbage soup in a pot covered with a flat cake.
