Banana bread
 

Another healthy dessert. I spotted it at Starbucks in America, but it is obvious that their version does not at all correspond to my ideas about what is great in terms of healthy ingredients. Therefore, I replaced sugar, butter, wheat flour with healthy counterparts. Here’s a recipe for making banana bread.

Ingredients: 3-4 ripe bananas, 80-100 grams of coconut oil, sweetener to taste (organic honey (I put 5-6 tablespoons) or stevia (1 flat tablespoon steviziod)), an egg or tablespoon of flaxseeds, teaspoon a spoonful of soda, a pinch of salt, 300-400 grams of buckwheat * or flaxseed flour, a large handful of walnuts.

Making banana bread:

Put coarsely chopped bananas in a large bowl, add coconut oil, honey or stevia, an egg or flaxseed substitute (In a coffee grinder, grind flaxseeds, add water to the powder and leave for a few minutes until it becomes jelly. the resulting mass into the dough.) Add salt and soda, “quenched” with boiling water. Mix thoroughly with a blender. Finally, gradually add flour, stirring well with a whisk. The dough should have a very thick sour cream consistency. Break the walnuts and add to the dough, stir. Brush a deep rectangular shape with coconut oil, lightly dust with flour and pour the dough into it. Bake in an oven preheated to 180C for 40 minutes. Chill the finished banana bread and cut into pieces.
